Makes 12
375ml (1 ½ cup) cake flour
125ml (½ cup) Ace Super Maize Meal Quick cook
3ml (½ teaspoon) salt
15ml (1 tablespoon) baking powder
125ml (½ cup) soft brown sugar
250ml (1 cup) milk
125g butter, melted
1 egg
150g fresh or frozen blue berries
  1. Preheat oven to 190 degrees °C. Grease muffin tin or line with paper muffin cases.
  2. Sift flour, Ace Super Maize Meal, salt and baking powder together into a large bowl. Add sugar.
  3. Dredge the blueberries in the flour mixtures.
  4. In a small bowl, combine the milk, butter and egg. Stir the wet ingredients into the flour mixture just until moistened. Spoon mixture into prepared muffin tin.
  5. Bake in preheated oven for 20 minutes. Let muffins sit for 10 minutes before removing from the tin.
