125ml (½ cup) Ace Super Maize Meal Quick cook
500ml (2 cups) cake flour
3ml (½ teaspoon) salt
10ml (2 teaspoons) baking powder
100g butter
190ml (¾ cup) sugar
125ml (½ cup) desiccated coconut
1 egg
45ml (3 tablespoons) milk
5ml (1 teaspoon) vanilla essence
  1. Preheat oven to 180 degrees °C. Grease a large baking sheet.
  2. In a large bowl, sift together, maize meal, flour, salt and baking powder; rub in the butter until mixture resembles fine bread crumbs.
  3. Add sugar and coconut, mix well. Beat the egg, milk and essence together, add to flour mixture and mix gently to a stiff dough.
  4. On a lightly floured surface, roll dough out to a thickness of 6cm. Cut out with a cookie cutter and place on a prepared baking sheet, press a halved glace cherry on each cookie.
  5. Bake in oven for 15 minutes or until light brown.
