1 litre (4 cups) water
500ml (2 cups) Ace Super Maize Meal Quick cook
125ml (½ cup) grated parmesan cheese
150g thin stemmed broccoli
250g beef sausages
200g cherry tomatoes, halved
2 garlic cloves, crushed
200g mozzarella balls, sliced

  1. Heat oven to 190 degrees °C. Grease and line a large baking sheet.
  2. In a large saucepan, bring the stock to the boil. Slowly pour in the Ace super maize meal, a little at a time, until completely absorbed.
  3. Lower the heat, stir quickly for 5 minutes, then remove from the heat altogether. Stir in 1 tbsp of the Parmesan cheese, then spread the porridge out onto the baking sheet, so that it’s 2 – 3cm thick.
  4. Cook the broccoli in salted water for 2 minutes, drain, then rinse under cold water.
  5. Remove casing from sausages and tear up sausage meat into bite sized pieces.
  6. Arrange the mozzarella slices and remaining Parmesan over the maize meal crust, then top with the tomatoes, garlic, broccoli and sausage meat.
  7. Bake for 20 minutes until the sausage is browned and the sides of the maize meal crust crisp.
  8. Garnish with basil leaves and cut into wedges, serve warm.
