125g butter, softened
2/3 cup (180ml) castor sugar
2 eggs
3ml (½ teaspoon) salt
375ml (1 ½ cups) cake flour
250ml (1 cup) Ace Super Maize Meal Quick cook
5ml (1 teaspoon) baking powder
125ml (½ cup) milk
125ml (½ cup) canned corn kernels, drained
125ml (½ cup) grated cheddar cheese
  1. Preheat oven to 190 degrees °C. Lightly grease a loaf tin.
  2. In a large bowl cream together the butter and sugar, beat in eggs and salt.
  3. Sift together cake flour, Ace Super maize meal and baking powder, add to creamy mixture, add milk and beat until mixture is smooth.
  4. Fold in corn kernels and spoon into prepared loaf tin. Sprinkle top with grated cheese. Bake in oven for 20 – 25 minutes, or until skewer inserted in the centre comes out clean.
  5. Serve warm or cold with butter and marmalade.
