Vegetable Curry
Ingredients
- 3 tablespoons of cooking oil
- 1 teaspoon fresh ginger and garlic (crushed)
- 3 tins of Koo Mixed Vegetable in Brine
- 1 packet of All Gold Tomato Paste
- 1 teaspoon of curry powder
- Pinch of salt
- Fresh coriander
Method
- Heat the cooking oil in a pot
- Add the ginger and garlic as well as curry powder to the pot
- Add the tomato paste with some water to make a gravy
- Decant the brine from the tinned mixed vegetables and add the vegetables to the gravy
- Season with salt and allow to simmer for 10 minutes
- Garnish with freshly chopped coriander then serve
