Vegetable Curry

Ingredients

  • 3 tablespoons of cooking oil
  • 1 teaspoon fresh ginger and garlic (crushed)
  • 3 tins of Koo Mixed Vegetable in Brine
  • 1 packet of All Gold Tomato Paste
  • 1 teaspoon of curry powder
  • Pinch of salt
  • Fresh coriander
 

Method

  1. Heat the cooking oil in a pot
  2. Add the ginger and garlic as well as curry powder to the pot
  3. Add the tomato paste with some water to make a gravy
  4. Decant the brine from the tinned mixed vegetables and add the vegetables to the gravy
  5. Season with salt and allow to simmer for 10 minutes
  6. Garnish with freshly chopped coriander then serve
  7.
