Creamy Maize Pudding with Ace Cream of Maize

Ingredients

  • ½ cup Ace Cream of Maize
  • 1 tin coconut milk
  • 3 tablespoons sugar
  • Pinch of Nutmeg
  • 1 teaspoon of vanilla essence
  • Fruits or berries or compote to serve
  • Cinnamon powder to sprinkle
 

Method

  1. Place all the ingredients except the cinnamon powder in a pot and whisk together to avoid lumps
  2. Simmer on medium heat whilst stirring continuously with a whisk until the mixture starts to bubble and thicken – DO NOT BOIL
  3. Cook for 3 to 5 minutes and stir continuously until it is creamy in texture
  4. Cover the pot and cook for a further 5 to 10 minutes
  5. Serve warm in dessert bowls with fruit, berries or compote and sprinkle with cinnamon powder over
  6.
