Creamy Maize Pudding with Ace Cream of Maize
Ingredients
- ½ cup Ace Cream of Maize
- 1 tin coconut milk
- 3 tablespoons sugar
- Pinch of Nutmeg
- 1 teaspoon of vanilla essence
- Fruits or berries or compote to serve
- Cinnamon powder to sprinkle
Method
- Place all the ingredients except the cinnamon powder in a pot and whisk together to avoid lumps
- Simmer on medium heat whilst stirring continuously with a whisk until the mixture starts to bubble and thicken – DO NOT BOIL
- Cook for 3 to 5 minutes and stir continuously until it is creamy in texture
- Cover the pot and cook for a further 5 to 10 minutes
- Serve warm in dessert bowls with fruit, berries or compote and sprinkle with cinnamon powder over
