Cream of Maize Flapjacks

Ingredients

  • 1 cup of Ace Cream of Maize
  • 1 egg
  • 1 cup of milk
  • 1 tablespoon of sugar
  • 1 heaped teaspoon of baking powder
  • 1 teaspoon of vanilla essence
  • 1 tablespoon of melted butter or margarine
  • Pinch of salt
 

Method

  1. Place Ace Cream of Maize into a mixing bowl
  2. Add the sugar, baking powder and salt
  3. Add the egg, melted butter or margarine and milk
  4. Mix well using an electric hand mixer or whisk to avoid lumps
  5. Add the vanilla essence
  6. Mix well to make a batter
  7. Rest the mixture for at least 30 minutes
  8. Heat a frying pan
  9. Grease the frying pan with Spray & Cook or butter or margarine and heat the pan
  10. Add approximately ¼ cup of batter into the hot pan and cook on one side then flip it over to cook the other side
  11. Serve whilst warm with honey, jam, preserves, whipped cream and fruit or ice-cream
  12.  

Variations

For preferred consistency you can vary water level and cooking time.
