Hearty Beef Stew with Ace Quick Cook Samp
Ingredients
- 2 cups of Ace Quick Cook Samp
- 2 cups of cold water
- 4 tablespoons of cooking oil
- 750g beef cubes
- 1 tin All Gold Italian Style Peeled and Diced Tomatoes
- 1 teaspoon of sugar
- 1 onion (chopped)
- Fresh ginger and garlic (crushed)
- 1 each of red, green and yellow peppers thinly sliced
- Herbs and Spices: BBQ spice, Mixed Herbs, Dried Parsley (to taste)
- Pinch of salt
Method
- Put Ace Quick Cook Samp into a pot and add cold water then bring it to boil
- Boil on the stove with the lid on the pot for 5 minutes
- Reduce the heat and allow to simmer for 20-30 minutes with the lid of the pot at an angle
- Once cooked, strain the excess water from the samp and set aside
- Put oil into a pot and heat
- Place chopped onions and peppers into the pot to fry until the onions are golden brown
- Add ginger and garlic then stir
- Add beef cubes
- Allow the beef cubes to brown and add a little water if necessary to prevent sticking in the pot
- Add the herbs and spices
- Add the All Gold Italian Style Peeled and Diced Tomatoes, the teaspoon of sugar and salt
- Allow to simmer until the beef is soft
- Serve on cooked samp
