Hearty Beef Stew with Ace Quick Cook Samp


  • 2 cups of Ace Quick Cook Samp
  • 2 cups of cold water
  • 4 tablespoons of cooking oil
  • 750g beef cubes
  • 1 tin All Gold Italian Style Peeled and Diced Tomatoes
  • 1 teaspoon of sugar
  • 1 onion (chopped)
  • Fresh ginger and garlic (crushed)
  • 1 each of red, green and yellow peppers thinly sliced
  • Herbs and Spices: BBQ spice, Mixed Herbs, Dried Parsley (to taste)
  • Pinch of salt


  1. Put Ace Quick Cook Samp into a pot and add cold water then bring it to boil
  2. Boil on the stove with the lid on the pot for 5 minutes
  3. Reduce the heat and allow to simmer for 20-30 minutes with the lid of the pot at an angle
  4. Once cooked, strain the excess water from the samp and set aside
Method – Beef Stew:
  1. Put oil into a pot and heat
  2. Place chopped onions and peppers into the pot to fry until the onions are golden brown
  3. Add ginger and garlic then stir
  4. Add beef cubes
  5. Allow the beef cubes to brown and add a little water if necessary to prevent sticking in the pot
  6. Add the herbs and spices
  7. Add the All Gold Italian Style Peeled and Diced Tomatoes, the teaspoon of sugar and salt
  8. Allow to simmer until the beef is soft
  9. Serve on cooked samp
