Coconut Maize Rice Pudding


  • 1 cup Ace Maize Rice
  • 1½ cups of fresh cream
  • 1½ cups of coconut milk
  • ½ cup of sugar
  • 1 cup of desiccated coconut
  • 2-3 heaped tablespoons of custard powder
  • 1 teaspoon of butter or margarine
  • 1 teaspoon of vanilla essence
  • 6 tablespoons of apricot jam
  • Pinch of Salt
  • Cinnamon powder to sprinkle


  1. Rinse the Ace Maize Rice and drain off the water
  2. Add the fresh cream and coconut milk then bring to a boil on high heat
  3. Once boiling, turn down the heat of the stove to medium heat
  4. Add the desiccated coconut and mix well
  5. Simmer for approximately 45 minutes, stirring occasionally
  6. Add the salt, butter or margarine, sugar and vanilla essence and mix well
  7. Simmer for another 5 minutes then add the custard powder
  8. Mix well
  9. Simmer on low to medium heat for another 5 to 10 minutes
  10. Heat the jam in the microwave to make a sauce
  11. Serve warm in a dessert bowl with a swirl of apricot jam and a sprinkle of cinnamon powder
