Coconut Maize Rice Pudding
Ingredients
- 1 cup Ace Maize Rice
- 1½ cups of fresh cream
- 1½ cups of coconut milk
- ½ cup of sugar
- 1 cup of desiccated coconut
- 2-3 heaped tablespoons of custard powder
- 1 teaspoon of butter or margarine
- 1 teaspoon of vanilla essence
- 6 tablespoons of apricot jam
- Pinch of Salt
- Cinnamon powder to sprinkle
Method
- Rinse the Ace Maize Rice and drain off the water
- Add the fresh cream and coconut milk then bring to a boil on high heat
- Once boiling, turn down the heat of the stove to medium heat
- Add the desiccated coconut and mix well
- Simmer for approximately 45 minutes, stirring occasionally
- Add the salt, butter or margarine, sugar and vanilla essence and mix well
- Simmer for another 5 minutes then add the custard powder
- Mix well
- Simmer on low to medium heat for another 5 to 10 minutes
- Heat the jam in the microwave to make a sauce
- Serve warm in a dessert bowl with a swirl of apricot jam and a sprinkle of cinnamon powder
